We are seeking a highly motivated and experienced Food & Beverage Manager to lead our Food & Beverage team with a strong focus on banquets & events, while overseeing the day to day operations across La Boca, Terrace Gardens Restaurant, Cascades Cocktail Lounge, in room dining and Banquets.

About the role
You will play a key leadership role within Stamford Plaza Adelaide, taking ownership of the hotel's diverse Food & Beverage operations and ensuring we consistently deliver exceptional service, quality and commercial results.
Reporting to the Director of Culinary and Deputy General Manager, you will be responsible for the overall operational leadership of the Food & Beverage department, with a primary focus on the successful delivery and continued growth of our banquets & events operation.
You will lead the planning and operational execution of conferences, meetings, weddings, gala dinners, cocktail receptions and special events, ensuring every function is delivered to the highest operational and service standards.
Working closely with the Sales & Events team, Director of Culinary and hotel leadership, you will ensure client expectations are exceeded while achieving departmental revenue, cost and profitability targets.
In addition to leading banquets & events, you will oversee the daily performance of our restaurants, bar and in room dining operations, ensuring consistency in service delivery, operational efficiency and guest satisfaction across all outlets.
You will lead a large operational team, drive service excellence, manage labour and operating costs, identify revenue opportunities and use business data to make informed decisions that improve both the guest experience and departmental profitability.
Your responsibilities will include:
- Take overall responsibility for the daily operation and performance of the hotel's Food & Beverage department, providing visible and hands-on leadership across all outlets.
- Lead the banquets & events operation, from planning and preparation through to the successful delivery of conferences, meetings, weddings, gala dinners and other major functions.
- Work closely with the Sales & Events team to understand client requirements and ensure events are delivered to the highest operational, service and commercial standards.
- Oversee the daily operations of La Boca, Terrace Gardens Restaurant, Cascades Cocktail Lounge and in-room dining, ensuring consistent service, presentation, quality and guest satisfaction.
- Establish and maintain high service standards across all Food & Beverage operations, actively monitoring service periods and addressing opportunities to improve efficiency and the guest experience.
- Build strong relationships with guests, VIPs, corporate clients and event organisers, taking ownership of guest feedback, complaints and service recovery.
- Manage staffing levels, rostering and labour productivity, ensuring resources are aligned with business demand, functions and forecast occupancy.
- Take responsibility for departmental budgets, revenue targets, forecasting, P&L performance and operating costs, identifying opportunities to improve financial results.
- Drive revenue and profitability opportunities across outlets, banquets & events, beverage and in room dining while maintaining appropriate cost controls.
- Work closely with the Director of Culinary to ensure food quality, presentation, menu execution and overall service standards are consistently achieved.
- Maintain effective stock control, purchasing, inventory and cost-control procedures, including monitoring food and beverage costs, wastage and operational expenses.
- Lead the recruitment, onboarding, training, coaching and performance management of Food & Beverage employees, developing a capable and high-performing team.
- Support and develop supervisors and emerging leaders, building leadership capability and succession strength across the department.
- Ensure compliance with RSA, food safety, WHS, hotel policies and operational procedures, while maintaining appropriate opening, closing and service standards across all outlets.
- Work collaboratively with Front Office, Housekeeping, Engineering, Finance, Sales & Events and other hotel departments to ensure seamless operations, resolve issues and contribute to the hotel's broader strategic and operational objectives.
A Commercially Focused Leader
You will understand that this role is not only about delivering great hospitality it is also about running a commercially successful Food & Beverage operation.
You will have strong financial acumen and understand departmental budgets, P&L performance, forecasting, revenue generation, labour productivity and cost control. You will use business data and operational insights to identify trends, address underperformance and implement strategies that improve departmental results.
Working closely with the Director of Culinary, Deputy General Manager and Finance team, you will monitor performance against budget and forecast, identify commercial opportunities and take ownership of strategies designed to improve revenue, productivity and profitability.
A People Leader
A key focus of the role will be developing a strong, capable and engaged Food & Beverage team.
You will create an environment where employees understand what is expected of them, receive regular feedback and have genuine opportunities to develop their skills and careers.
You will lead by example, remain approachable and visible to the team, and ensure high standards of accountability and performance are maintained across the department.
You will also play an important role in developing supervisors and emerging leaders, building the capability and succession strength of the Food & Beverage department.

About you
You are an experienced hospitality professional who enjoys leading from the front, developing successful teams and taking ownership of operational and commercial performance.
You will bring:
- Minimum 5 years' experience in a senior Food & Beverage leadership position within a luxury hotel, premium hospitality or high-volume events environment.
- Extensive experience leading banquets & events operations is essential.
- Proven experience managing conferences, weddings, gala dinners and large-scale functions.
- Experience overseeing multiple Food & Beverage outlets simultaneously.
- Strong commercial and financial acumen, including experience with budgets, forecasting, labour costs, productivity and departmental financial performance.
- Experience with P&L management and the ability to interpret financial and operational data.
- Exceptional leadership, coaching and people management skills.
- Proven ability to develop supervisors and emerging leaders.
- Excellent organisational, communication and stakeholder management skills.
- The ability to work effectively in a high-volume, fast-paced hotel environment.
- Strong attention to detail with a genuine passion for delivering memorable guest experiences.
- Current South Australian Responsible Service of Alcohol (RSA) certification.
