The Hotel
Stamford Plaza Sydney Airport is a 316-room hotel located in Mascot, near the Sydney Domestic Airport. The hotel offers 11 function rooms, including boardrooms, meeting spaces and a grand ballroom, suitable for small meetings through to large conferences of over 300 people. It also features La Boca, an on-site Argentinian restaurant and bar renowned for its authentic open-fire grill experience, as well as 24-hour room service.
The Role
We are currently seeking an enthusiastic and passionate Full Time Demi Chef to join our dynamic Kitchen Team at Stamford Plaza Sydney Airport.
This role will support the delivery of exceptional dining experiences across La Boca Restaurant & Bar, banquets and other food and beverage outlets. The successful candidate will have previous experience working with charcoal or open-fire grills and enjoy working in a fast-paced kitchen environment while maintaining the highest standards of food quality, presentation and consistency.
Key Responsibilities
- Prepare, cook and present menu items in accordance with Stamford standards and recipe specifications.
- Assist with food preparation and service across La Boca Restaurant & Bar, banquets and other food and beverage outlets.
- Prepare mise en place for your designated section to ensure the smooth running of service.
- Operate and maintain your kitchen section efficiently while supporting senior chefs during service.
- Demonstrate experience cooking over charcoal or open-fire grills, delivering authentic grilled dishes to a consistently high standard.
- Assist in maintaining quality, consistency and presentation of all dishes.
- Monitor food rotation, minimise food waste and ensure stock is handled correctly.
- Maintain the highest standards of food safety, hygiene and HACCP compliance.
- Work collaboratively with the kitchen brigade to deliver exceptional guest experiences.
- Be flexible to work across different kitchen sections as required.
What We're Looking For
- Certificate IV in Commercial Cookery or equivalent qualification.
- Previous experience as a Demi Chef, Commis Chef or similar role within a hotel or busy restaurant environment.
- Experience cooking using charcoal, wood-fire or open-fire grills is essential.
- Experience with Argentinian or South American cuisine is highly regarded.
- Strong understanding of food safety, WHS procedures and HACCP.
- Excellent communication and teamwork skills.
- Positive attitude with a willingness to learn and develop.
- Ability to work efficiently under pressure in a fast-paced kitchen.
- Flexibility to work a rotating roster, including early mornings, evenings, weekends and public holidays.
