Salary: $75,000 – $85,000 per annum (plus superannuation)

About the Roles
We are seeking experienced Trade Waiters to join our Food & Beverage team across a range of service areas. These positions suit candidates with strong hospitality experience in premium dining environments.
The roles may include duties across the following functions:
- Food & Beverage Attendant (formal service)
- Food & Beverage Supervisor / Team Leader
- Maitre d’
- Sommelier
- Drink Waiter / Bartender (including Head Bartender or Head Sommelier responsibilities)
Successful candidates may be appointed to one or more of these functions depending on their skills, experience, and operational requirements.
Key Responsibilities
- Deliver high-quality food and beverage service in a formal or à la carte dining environment
- Provide professional guest service, including menu and beverage recommendations
- Perform wine and beverage service, including pouring, pairing, and table-side presentation where required
- Prepare and serve cocktails and beverages in bar or lounge settings
- Support or lead service operations, including coordination of staff during service periods
- Maintain knowledge of menus, wine lists, and beverage offerings
- Assist with stock control, ordering, and inventory processes
- Contribute to team training and mentoring where applicable
- Ensure compliance with RSA, WHS, and food safety standards
- Maintain presentation standards and efficient service delivery
Essential Criteria
- Minimum 2 years’ experience in a relevant hospitality role within a premium or high-volume venue
- Experience in food and beverage service, bar service, or supervisory roles
- Valid Responsible Service of Alcohol (RSA) certificate
- Strong customer service and communication skills
- Ability to work in a fast-paced team environment
- Basic knowledge of food, wine, and beverage service
Desirable Criteria
- Experience in formal dining or five-star hotel environments
- Experience as a sommelier, bartender, or F&B supervisor/team leader
- Knowledge of wine, cocktails, and food pairing
- Experience using POS systems such as Micros or Opera
- Leadership or team coordination experience
