Stamford Plaza Sydney Airport is seeking an experienced and commercially minded Head Chef to lead the culinary operations responsible for Banquets, Breakfast and In-Room Dining.
Reporting directly to the General Manager, this role sits at the centre of the hotel’s conference and event operation and is responsible for delivering high-volume culinary production while maintaining exceptional food quality, operational discipline and cost control.
This is an opportunity for a strong operational leader to take ownership of a key function within a busy conference hotel environment.
About the Role
The Head Chef is responsible for the day-to-day management of kitchen operations across conference and banquet catering, hotel breakfast service, and in-room dining.
Working closely with the Conference & Events and Food & Beverage teams, the Head Chef will ensure seamless execution of functions and daily dining services while maintaining Stamford’s standards for food quality, presentation, food safety and operational excellence.
This role requires a hands-on leader who understands the demands of hotel culinary production and can balance service delivery with strong food cost and labour management.
Key Responsibilities
- Lead the kitchen operations supporting banquets, conferences, breakfast and in-room dining
- Execute high-volume event catering while maintaining strong food quality and presentation standards
- Plan and manage culinary production in line with Banquet Event Orders (BEOs) and occupancy forecasts
- Maintain strict control of food cost, labour productivity and kitchen efficiency
- Lead and develop a professional culinary team including chefs, apprentices and kitchen attendants
- Ensure compliance with food safety standards, HACCP requirements and WHS obligations
- Maintain operational discipline across kitchen production, service readiness and cleanliness
- Work closely with the Conference & Events and Food & Beverage teams to ensure seamless event execution
About You
You are an experienced chef with a strong background in hotel or large-scale hospitality operations.
You understand the pace and discipline required in a conference and banquet-driven environment and have the leadership skills to guide a team through busy service periods while maintaining high standards.
You will bring:
- Trade qualification in Commercial Cookery
- Senior culinary leadership experience within a hotel or large hospitality environment
- Proven experience delivering high-volume banquet or conference catering operations
- Strong capability in food cost control, labour management and operational planning
- Food Safety Supervisor Certification (NSW) or ability to obtain
- Strong knowledge of HACCP, food safety and WHS practices
- Excellent leadership and communication skills
