About the role

 

A unique opportunity currently exists for a highly skilled Executive Sous Chef with HACCP experience to join our award-winning team at Stamford Grand Adelaide on a full-time basis. Stamford Grand Adelaide is located on the beach frontage of one of Adelaide’s premier beach side locations, Glenelg. We are looking for candidates with exceptional cooking skills and a passion for the hospitality industry, who is a true professional with impeccable firm yet fair leadership qualities, who can lead under pressure, coach and guide to ensure culinary service excellence.

 

Core role requirements

 

  • Direct report to the Executive Chef, we seek a passionate individual with a flair for developing and mentoring our growing team
  • Proven ability to maintain high standards of food production and service
  • Strong leadership skills with a focus on training, development, and team morale
  • Ability to handle a large volume of meals and deliver excellence during high-pressure services
  • A commitment to maintaining top-tier food safety and cleanliness standards
  • Support the Executive Chef in achieving performance standards and seamless operations under pressure
  • Assisting the Executive Chef with innovations, techniques and procedures to further drive the Hotels vision and success to exceed budget demands
  • Working closely with the Front of House Team to deliver for our guests
  • Control and analyse departmental costs on an ongoing basis
  • Implementation of menu and function packages alongside of the Executive Chef

 

About you

 

  • Proven experience as an Executive Sous Chef in a high-volume venue
  • Minimum three years + experience as an Executive Sous Chef or equivalent
  • Chef trade qualification (essential)
  • Experience working with senior management within a Hotel environment
  • Excellent communication and interpersonal skills
  • Experience leading a large kitchen team in the absence of the Executive Chef
  • Willingness to work collaboratively within a multicultural diverse team
  • Experience managing breakfast buffet for 150+ guests
  • Experience servicing large functions and events
  • Availability to work five shifts per week, including evenings, public holidays and weekends
  • Comprehensive knowledge of kitchen hygiene practices and WH&S standards
  • Must have unrestricted Australian working rights
