About the Role

 Reporting to the Executive Chef, we are seeking a Sous Chef to lead our Banquets Kitchen Team.  Some responsibilities in this role include:

  • Smooth and efficient operation of the Banquets Kitchen, with a focus on providing a high quality product and ensuring client satisfaction
  • Preparing mise-en-place for your designated work station to ensure the smooth running of service
  • Check food rotation to ensure freshness of all food products whist following HACCP Procedures
  • Ensuring Banquets function are set up and operational as per stipulated times and numbers required
  • Working as supportive team player with other Sous Chefs, Cold Kitchen and Pastry Kitchen
  • Meet all health and hygiene requirements and cleanliness
  • Ensuring a seamless Guest experience through prompt and efficient food service
  • Have strong inter-personal skills and communication with all team members

Skills and experience

  • Ability to work various shifts including early mornings, weekends and public holidays
  • Enjoy working in a large team environment
  • Be organised and have an eye for detail
  • Can multi task in a fast paced environment while constantly maintaining a calm demeanour
  • Be dedicated to providing world class cuisine

Requirements for the role

  • An Australian recognised Trade or relevant qualification in Commercial Cookery
  • Previous experience in a similar role
  • The ability to work in a fast paced kitchen
  • Excellent communications skills, both verbal and written
  • Team player
  • Ability to work on rotating shifts across 7 days
  • A proactive approach to system improvements
  • Knowledge of HACCP and relevant food safety accreditation
